I didn't even know this was a thing, but apparently the U.S. record was just broken by Singapore.
The mosaic consisted of over 20,000 cupcakes, smashing the previous cupcake mosaic record set in the U.S. which was made of only 5,900 cupcakes. The mosaic resembled the Singapore flag and was assembled on the country's 47th birthday.

1,323 pounds of flour
772 pounds of eggs
661 pounds of oil
1,543 pounds of fondant
18 hours of baking
The cupcakes were sold for $4 each with the proceeds benefiting local organizations which aim to support underprivileged youth and low-income families.
